Roasted Tomato Basil Soup

What You’ll Need:
2 c. cherry tomatoes
3 tbsp. olive oil
1 tsp. salt and pepper
2 garlic cloves, minced
½ yellow onion, diced
3 c. chicken broth
1 (28 oz) can diced tomatoes
1 tsp. garlic salt
1 tsp. garlic powder
½ tsp. black pepper
1 tbsp. fresh basil, chopped
How to:
Preheat oven to 400 degrees. Place cherry tomatoes on baking sheet, pour
1 ½ tbsp. olive oil over top, along with salt and pepper. Roast tomatoes for 15-20 minutes.
In large pot, drizzle olive oil and heat to medium-high. Add garlic and onion. Saute 4-6 minutes. Add roasted tomatoes, chicken broth, canned tomatoes with juice, garlic salt, garlic powder, pepper, and basil.
Bring soup to soil, then simmer for
20 minutes, partially covered.
Use emersion blender to blend soup to desired consistency. Serve.
